Our newest profile is that of a special dairy product, ricotta. People think it is cheese, and I did as well, but it is not. Not technically, at least. It's really a product made from the byproducts of cheese-making. The Italians really love ricotta, so if you're making Italians dishes, consider adding some ricotta. I might.

We just got a compost bin and I was saddened to learn that dairy products are a big composting no-no, apparently. But if RICotta is not technically a cheese, does that mean it's not technically a dairy product, and ergo not technically a composting no-no? I ask because, if I try to make this myself, the taste is likely to be so putrid that composting could be the most humane means of disposal ;)

DeleteI was not expecting this one. Lasagna is all I use ricotta in. Maybe I will put it in something with lots of sour cream and serve it to Paul.
